This is a delicious, healthy breakfast with a good balance of protein, carbohydrates, vitamins and minerals. Full of antioxidants, it is great way to start your day. You can make a batch of the basic sauce and store it in the fridge so each morning, all you need to do is heat it up and add the eggs.
Small amount of coconut or olive oil for frying
1 small onion
½ tsp ground cumin
½ tsp ground coriander seed
1 tin tomatoes
Salt and Pepper to taste
Fry onions in oil for 2 min then add cumin and coriander and continue to fry gently until soft. Add tinned tomatoes and salt to taste and bring to simmer. Crack eggs on top, sprinkle with salt and pepper and a little paprika on each yolk. Place lid on pan and cook on a low heat until the egg whites are solid. Serve over spinach.
