These are a tasty and healthy alternative to frozen chips and perfect for those wanting to follow a healthy Paleo lifestyle. They are crispy on the outside and deliciously creamy on the inside.
3 medium orange sweet potatoes, washed, optionally peeled and cut into ½ inch thick even slices. (You can cut thinner or thicker if you like)
3 Tablespoons coconut oil
1 ½ teaspoons paprika
1 ½ teaspoons ground cumin
¼ teaspoon cayenne (optional if you like spicy fries)
Himalayan or sea salt, to taste
Place spices, salt and oil in a bowl and mix through. Add sweet potato wedges and thoroughly coat in oil mixture. Place on a baking tray and cook in a 180 degree oven for approximaely 30 minutes or until crispy on the outside and soft in the centre.
