Chia Seed Pudding – Paleo

2 tablespoons organic chia seeds

Pinch of himalayan or sea salt

3/4 tablespoon raw honey (or stevia, or a combination of both)

3/4 cup of almond milk or coconut milk

OR (my favourite for an incredibly creamy texture) 1/2 cup coconut cream plus 1/4 cup filtered water

1 teaspoon vanilla essence

Optional – 1 teaspoon nutmeg (or a little more if you want)

– OR 2 tablespoons organic frozen or fresh berries

Simply mix all the ingredients together and allow to set. It looks great if you pour it into individual serving bowls. After about 15 minutes, give it another stir and then leave. This can be eaten with 1 hour but if you leave it overnight it will set more. Serves 2
