1 ½ cups organic almond meal (can also be ground cashews but make sure they have been soaked and then dehydrated)
60 grams organic dessicated coconut
¾ cup maple syrup or honey (or ½ and ½, or you can use stevia or a combination of stevia and honey/maple syrup)
1 ½ teaspoons vanilla
100 grams melted butter (cooled)
1 pinch of himalayan or sea salt
Line a tin with baking paper and preheat oven to 180 degrees
In a large bowl, place the almond meal, coconut, syrup and salt and whisk to break up any lumps.
Whisk the eggs together with the vanilla and melted cold butter and add to the dry ingredients. Mix together and pour into lined tin. Sprinkle with flaked almonds and bake 30-50 minutes.
