This chia seed pudding is a delicious and healthy snack or dessert. You can also make it for a special treat breakfast.
INGREDIENTS:
2 tablespoons organic chia seeds
Pinch of himalayan or sea salt
3/4 tablespoon raw honey (or Monk sugar, stevia, or a combination)
3/4 cup of almond milk or coconut milk
OR (my favourite for an incredibly creamy texture) 1/2 cup coconut cream plus 1/4 cup filtered water
1 teaspoon vanilla essence
Optional – 1 teaspoon nutmeg (or a little more if you want)
– OR 2 tablespoons organic frozen or fresh berries
METHOD:
Simply mix all the ingredients together very thoroughly and allow to set. It looks great if you pour it into individual serving glasses. After about 15 minutes, give it another stir and then leave. This can be eaten with 1 hour but if you leave it overnight it will set more. Serves 2. I tend to make a bulk amount at one time. So I make 4 times the amount and store in the fridge for up to 1 week.
